Think @AUCE was planning to sauce using Mother's Milk hot sauce, I can identify. SWMBO likes BBQ sauce, sweet and tangy, on whole chicken. We often do two tone birds where one side is slathered, the other rubbed.NPHuskerFL said:Gonna lather her up at 160....

Rubbed the whole bird and lathering the top.....combo is good...mines a bbq sauce ..Got some zing sweet, sour bourbon...since having come up with imo is the perfect combination its.my go to.

@Skiddymarker okay that makes sense (I guess). But, why dry out for 48 hrs to get skin crisp only to saturate with sauce/moisture. That's what I was saying. Naw the underlying leathery skin will be fully crisped first. Then sauce..Think a chip.with dip..lol
