What is the best temp to pull a brisket?

I feel like I read somewhere 205. Any help would be appreciated.

Do not temp it.  It is when the probe slides like butter

Start probing at around 195℉-205℉ probing for like buttuh. Don't pull by temp alone.

The true "finish-line" indicator is when you can probe the thickest part of the flat and it feels like buttah.  That happens anywhere from around the mid-high 180's to the low 200's.  If you are FTC'ing then you might get away with a little carryover and could go with some light feel "resistance".  Temp is just a guide-the real experts will go by feel all the way.  "When it lets loose" is when you are there.  I'm not that proficient or adventurous.
Wherever you declare victory-don't slice until ready to eat and slice against the grain.  Also-no worries if the point is running around 10*+ hotter than the flat-the high fat content means it turns out just fine.  FWIW-

Yes I do assume that. This topic has been covered about 748 times. Just saying it doesn't work on my computer.  Happy Holidays my friend!
