Enjecting pork butt

I using Butchers pork injection. How long does it need to rest after injecting before putting it on the egg? The butt is 8 lbs.

    I'd say it doesn't matter. ...I inject sometimes right before starting.

    Its up to you. I have injected the night before and I have injected and hour before putting it on. You want to inject into the fat layer's, its not like a turkey where can put it anywhere. If you have the time and want your prep down then do night before. Try different injections to what flavor you want. I use apple juice and some BBQ rub as my injection to make it a little sweeter. There is no need to do more then 12 hours of hold after injection.

    To reduce those stray injection shots, inject thru a cling wrap.  Makes the clean-up process much easier.  FWIW-
    Louisville; Rolling smoke in the neighbourhood.  Life is too short for light/lite beer!  Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.

  • I have used Butchers injection it is good however, I also duluted it from the directions on the package. Butchers is designed for competition and to get intense flavor in a bite or two so it's a tad strong IMHO if your going to eat an entire plate full of it. I don't recall the salt content but the thing with pork if you get too much salt sitting inside the pork for an extended perior of time you will start to cure the butt and it will take on a ham like texture. I always light the egg, prep the butt, including injecting it and then straight to the egg once stabilished.

  • Pineapple juice with brown sugar or apple juice here - I inject the night before - the fresh enzymes break down the pork before I start to cook.

    IMHO yes. It depends on what you want in flavor. To me when I don't inject the pork is boring and needs something. You can try a side by side test some time. Buy a two packer and inject one and not the other and see which one you like better. Injecting isn't that match hard or takes to long, maybe 5 minutes.

    Just don't use angry orchard. I had 6 too many the other night and figured the pork needed some too. As it turned out, it didn't like it and neither did my wife. :D

    I injected one last weekend. Try using the apple cider concentrate I made.

    When injecting, inject in the fat seams between the muscles. You won't get much spray then. I injected 1 cup into a 7lb shoulder and only 2-3 tablespoons leaked out after resting in the fridge for 5-6 hours.

    It took over 14 hours total unwrapped.

    I don't think so, for apple cider anyway. Apple is a pretty delicate flavor and it gets cooked out easily. Maybe if the injection had salt and other spices it would be noticeable.

    For me the cider ads a lot of moisture and makes the butt basically sweat sugar as its heated. You get a very nice bark with a very moist inside. I didn't notice any apple flavor otherwise, and I even smoked with apple wood. Haha.

    Next time I might add 1 tablespoon of salt to the injection as I think that would be noticeable after the cook.

    @rosem - thanks for the info.  I think I might try injecting next time with cider and rub mix.

  • @Jeremiah‌ I get infused with angry orchard myself from time to time. Good stuff, apparently not in the pork though.
