The bird- 8 pound breast.
The rub- Salt, pepper, cayenne and a little more cayenne just because.
The oil- Lou Anna peanut oil.
Fryer- Masterbuilt Butterball.
Technique- Deep fry at 375 degrees until a internal of 145 degrees. No, that's not a typo, 145 degrees is where I pull deep fryed ones. More on this if requested.
Here she goes.

Give or take a little, 35 minutes once I drop it. I fry a tad hotter than most. Most say to fry breast at 325, however I will stay between 375-400 degrees from take off to touch down.

I did one in a outdoor pot one year, it was delicious and done in 45 minutes, best part is I did not burn the house down like so many others!! I like that countertop unit, enjoy brother @SGH

Thanks brother. They actually turn out a little better when done on a large outdoor gas fired unit because you can control the grease temp drops at will. However for spur of the moment or during inclement weather the indoor electric unit is fantastic. Hey for 44 bucks it was a steal. Makes a heck of a indoor fish fryer as well. Thanks again my friend.

Brother right now they are 1/2 price. I like this one thus far. For 44 bucks it's well worth it. And thank you for the kind words.

That's the temp I'd cook too. Problem with those indoor small fryers is with oil temp refractory time.

No doubt brother, but they are a lot better than the ones from just a few years ago. When I dropped the bird the oil fell to 330 degrees according to my Thermapen. It recovered to 375 degrees in about 9 minutes. Not bad for an electric.
