Swine cooks

Haven't posted in a while...thought I'd share a few interesting cooks!  First off, I did the Double Smoked Ham Steaks from Jeff Phillips page (http://www.smoking-meat.com/november-20-2014-double-smoked-ham-steaks).  They turned out great and I'd certainly recommend.  

Next, and more fun, I took a Pig Candy (Brown Sugar, Cayenne) recipe to another level by drizzling with chocolate.  The flavor combo was too much for some but the salt/sweet/sugar mix was interesting to say the least and fun to make/serve.  I think I ate about 9 of them waiting for people to come over on Thanksgiving.

    I like to make ham & cheese po boys out of ham steaks. It's one of my favorites.

    I've been thinking about pig candy. If I did it your way I'd never get any of it. The wife is a chocoholic and not even seeking treatment.

    We simply cut up the ham steaks and place them on po boy buns with American & chedder cheese along with a little mayo & mustard and pickles. Makes a great sandwich for sure. Simple and easy.

    The Pig Candy recipie is good. I did this a bit different since I needed the bacon to be crispy. I actually fried it using a CI skillet, then tossed each piece in the brown sugar and cayenne while it was hot and greasy. Then it cooled and stuck. Worked well.
