Sat Double Smoked Ham...

Going to give double smoking a ham a try today... Picked up a brown sugar cured bone in ham this morning. Planning on scoring it and rubbing it down with some Dijon mustard and then smoking it with hickory and cherry. After that, going to try and make some of the buffalo cauliflower bites that I saw on here last week, they looked great...

I buy "Ham Ends" at the farmers market, 30 lbs or so at a time. Cut them into usable chunks and smoke for 6 hrs with Hickory chunks. Then they are vac sealed and used for various cooks, pea soup, ham and eggs ect. The meat reduces by about a third and intensfies the flavor, good eats.NEPA, Med egg,

The farmers market I go to is on Wedensdays in Lewistown. When I tell the vendor I will take all the ends he has, the price goes down alot. The last time they went from 2.99 to 1.89 a lb.NEPA, Med egg,

Looks great Hap. We had the cauliflower from the kitchen clock a couple weeks ago. It was good, but going on the egg next time.
