pot roast recipe

I landed a fresh chuck roast off of Sher-Bear's uncle. I need a ci do recipe but has to either cook with gravy or finish the gravy after the roast. She has always cooked it in a crock pot but I'd like to egg it. Ideas? The gravy has to be good. Gravy, not au jus.

    This is our regular - no idea why it is called NE pot roast. 

    I do this in the egg in a 5 qt DO, sear is done on the propane burner, as well as gravy after the cook. We use beef broth instead of water, and it seems to take twice what the recipe calls for. Wondra to thicken the gravy.

    Henapple...I brown it in hot casserole dish in oil with onion and garlic.  Then add cumin seed, pepper, garlic salt.  I pull the meat and add flour to make a thin roux, brown that for a bit much like a Gumbo, 1/4 cup redwine then 1/4 cup water .  I line the bottom with carrots and lay the meat back on carrots.  I usually do 225 for 2-3 hours covered in the casserole (cast iron or other)

    Let me tell ya Hen. It was Very Good. If I do say so myself. I used a chuck roast.
