All in good fun. Good Q is good Q, chopped or pulled. Surprisingly, even that mustard stuff in SC isn't horrible. When it's hot, I slice some off for dinner, or snacking on if it isn't dinner time.
I then wait until it's cooled enough that I can pull it or shred it by bare hand.
Then mix juices back in, weigh it out into 8 oz chunks and freeze it in individual snack size ziplocs that I suck the air out of.

and a BBQ Guru temp controller.
Medium BGE in custom modified off-road nest.

I was never a fan of chopped because I was cooking it to IT of 200 and then chopping and it came out mush. Another post said something about chopped being pulled at 185 and chopped and it was way better. I may prefer chopped now.

@gamason-while there may not be beef BBQ there sure is pulled beef and it will stand against pulled pork any day. FWIW and have a great BGE weekend all.

There is BBQ(Eastern style, vinegar mop) and then there is pulled pork. Well, mustard-style counts too since that's where I'm from.

It's a personal preference but the above is the order in which I prefer it.Location- Just "this side" of Biloxi, Ms.
