CI Skillet Chicken

I know that I've posted a very similar cook before but this cook is just so good that I hope somebody that has never tried it will see this and give it a shot.
It's so simple. I used a 3 1/2 whole splayed chicken stuffed with fresh rosemary,thyme,sage and 1/4 of an apple plugging each end of the cavity. Got the egg to 500° raised indirect. Let the CI get happy for about 45mins and threw the chicken in. After about 30 mins I added a quartered onion,celery,carrots and 6 cloves of garlic. The only rub on the chicken was salt & pepper image I decided to make an apple cobbler so I fired the small up indirect to 425. Just chopped up 6 apples and dusted with cinnamon,brown sugar and some apple pie spice, dumped it in the CI skillet and poured in the topping. image Got a lil too much ice cream for the cobble to show up much in the pic but it was really good. All in all great Sunday meal.

    Thank you. This was the first for the apple cobble and I tought it turned out good. May precook the apples just a bit next time.

    I saw a similar cook over at Serious Eats just the other day. It looked great too. They have no egg of course. Yours looks great and sounds easy. my kinda cook. And almost all I eat these days is chicken and fish. Can't beat easy and tasty! Thanks for posting!

    Thanks @Carolina Q. I have been on a chicken,turkey and fish kick as well. Well besides the ribs I did last weekend. The cobler was with a mix of wheat flour and almond flour,so besides the brown sugar it wasn't to bad on the carb side of things.

    Fan-freakin-tastic. About how long does the chicken and veggies take to cook?

    Apple cobbler = awesome.

    After the skillet warmed for 40ish min the chicken went in. 30mins later I added the veggies for about 30ish mins. The entire cook was at 500° With the skillet about 4" above felt line image
