trying mayo crust another way

    @RRP, I tried some chicken breast not to long ago where I had Dukes in the marinade.  I didn't do anything for me really, though I am not disregarding it was my fault either for the lack of flavor.

    I understand, but using Dukes in a marinade isn't quite the same as spreading it on top of the meat so that when cooked it becomes a crust...just saying...

    :) The mayo serves a different purpose, so maybe its not cheating? Plus mayo doesn't turn the chicken into mush if left in the marinade for too long.

    True... I got the idea from "Man, Fire, Food".  However, they smoked the chicken a lot slower than I, so maybe that was the factor.  I may give it a whirl.  Or, maybe I will just make a Dukes mayo samitch and call it a day.

    Ya'll are killin me with the Mayo....Count me in. 

    I'll even try it on my chuck roast today...and the ribs ....of course. I'm ready to leave work now and fire up the egg !!!
