Meat Probe Placement for Brisket using Digiq

Which is the best way to use the temp probe with a Digi Q, on the top of the flat or inserted through side of the flat?

    I have a Stoker. I put the food probe in the side on the thickest part of the flat. However, when you probe with TP go from top to test for "like buttuh".
