Turkey Three Ways

The whole bird: fresh 13# turkey, brined x24 hours.  butter/herb mixture under the skin.  skin brushed with olive oil and dusted with kosher salt.  Roasted indirect at 375 approx 2 hrs.

Turkey legs: no prep, just roasted indirect.

Turkey breast: wet rub (canola oil, apple juice, salt, pepper, paprika, onion, chili powder) x8 hours. smoked over oak on the weber kettle x1 hr, then finished on the egg.
