Country Style Pork Ribs

I bought some country style pork ribs to cook on by LBGE this weekend - will be the first time I've done this kind of meat.  Wondering if the ribs will be better served by cooking them direct or indirect.  Would appreciate any thoughts. BGE DAWG - clear

    Country style ribs is a Boston butt cut into strips.  Cook them like a butt or any other ribs and you'll be fine.  

    Personally, indirect around 300° till tender.

    @BGEDawg-There are 2 different cuts of country style ribs. The loin cut is a tad better grilled raised direct but are awesome cooked indirect as well. The other cut of country style ribs are cut from the shoulder or "butt" and are a tad better cooked indirect as they need to render a little more than the ones from the loin. All that said, either cut cooked with either method still turns out great. They are a very versatile cut indeed. I have cooked them almost every way imaginable. Direct at 600+ degrees, indirect at 200 degrees and they always turn out well. Then there is the option of cooking them indirect until almost done and then giving them a quick sear to finish. Heck I don't think that there is a wrong way to cook country style ribs as long as live fire is involved. You said this is your first attemp at them. That said if you are concerned, cook them indirect and you will have more control over them. They will be great either way. Good luck and enjoy my friend.

    ^^^I agree with @SGH here.  There's no right or wrong way to cook them.  You can even NOT overcook them (presumption here is anything over 160 F is technically "overcooked").  That is, you can grill them like pork chops.

    If I'm cooking the loin cut ones I pull them at 180 internal. If I'm cooking the butt cut ones,I take them on up to 190-195 so that they render out well.

    If you cook country style ribs you will definitely earn the seal of approval. They are one of my very favorites.

    Usually the butt cut will sort of resemble a pork steak. The loin cut will be more long and slender.

    @Grillin_beers‌- There are a lot of good folks on here that are more than willing to help with most anything related to cooking. Not just the egg, but outdoor cooking in general. If you live on the coast or are ever on the coast I let folks come over and play with my stick burners and verticals. I'm glad to walk them through every step of firing and managing a wood fired unit. I even loan these units out free of charge if they are to be used for a good cause. Sometimes it's easier to decide if you want a vertical or a offset by actually trying them. I do this because most folks that believe they want a offset soon realize that they are far better served with a vertical for 95% of their cooks. Just something I do to try and help in some small way. There are others on here that do far more. That's the biggest reason I joined this forum. People's willingness to help. Truly a fine group of people that I'm proud to be in association with.

  • @SGH I couldn't agree with you more about the group of guys on here. It's amazing that on the Internet everyone is so supportive. I'd love to check out some of your stick burners sometime. I spend a lot of my summer on the coast so we will have to get together sometime and cook some great food.

  • Ohhhhh we are talking about different coasts my friend. I've never seen the Gulf Coast but would love to get down there one day. If I can convince SWMBO that I have a real future as a competition BBQer hopefully I'll get all over the country. We will see.
