Brisket almost done sitting at 185 right now taking it to 205 . it's cold and raining but the air smells awesome thanks to the egg

Do a probe check for tenderness before 205. 205 is not a magic number and "could" produce a dry brisket.

Looks like a cook done right! Two questions: first, do you care to share your prep? I'm always curious, I've yet to cook one but I'm always eager to read others approach. And 2. What do you look for when doing the "probe test" for tenderness?

@Grillnugget nothing special trim the excess fat then yellow mustard rubbed all over and dizzy dust red eye express and fred's black bart's brisket rub . And the egg @265 grid temp sit back and enjoy adult beverages . Probe test looking for it to go in like butter at various points on this one i think 190 would have been the win thats what my others did somehow i lost my mind and was gonna take it to 205 before checking but thanks to @cazzy he saved me from my own stupidityLarge Big Green Egg , XL Big Green Egg .
