Herb Crusted Pork Loin and Muffin Pan Sweet Potatoes

Threw together a quick herby and peppery rub and egged up a cheap $7 pork loin that was on sale. The rub had cracked pepper, orange peel, lemon peel, sea salt, basil, oregano, rosemary, minced garlic and maybe a coupla other things. Can't remember. It was good though. :)

My wife made the sweet potatoes...which are phenomenal! I've never been a fan of sweet potatoes or yams for the fact that they're always too sweet and too mushy. But this recipe is great IMO... Less mushy and less sweet, with a nice bite from the herbs and Parmesan. =P~ We do a high protein and clean carb lifestyle...for the most part, but we splurge every now and then. ;) This is a nice way to stay on track, with the 'feel' of splurging. :) Here is the recipe for the potatoes:
