Royal Brisket!

Started checking for tenderness at 185. Brisket went from 192 back to 187 and then back up to 196 before finally probing like butter at the 18.5 hour mark. Wrapped it and into cooler for 2 hours until supper.

Then sliced up some acorn squash, brushed with canola, s/p and parsley. Grilled 4 min a side then into a pan covered with half a stick of butter and 1/4 cup of maple syrup. Back into a 400 degree indirect egg for 15 minutes until tender

Sliced brisket, looks dry but wasn't. Took a couple pounds over to the neighbor and commenced eating.

Wife whipped up an almost pumpkin pudding pie and let's go Royal's!

Friggin home-run right there. Most eggcellent and yes I am watching the WS . A Royals home-run would be great-but truth be told I am a Chokeland A's fan-no further discussion required. However, I am a serious baseball fan. Thus the late nights EDT every year. Feb can't get here soon enough!Louisville; Rolling smoke in the neighbourhood. Life is too short for light/lite beer! Nice cook! Love the look of the acorn squash rings, very distinct.
Going to put a Costco flat on tonight. Really wanted to do a full packer, but couldn't find one. Fortunately they had these flats untrimmed in the cryo's and I was able to find a nice big floppy one with a good fat cap that wouldn't need a ton of trimming.
Wish me luck.

@SGH Thanks - when I get home tonight I will take a picture if it for you. It was posted in the store next to the pumpkin pudding. Its pretty easy as its graham cracker crust, pudding, then pudding mixed with cool whip and topped with cool whip. Whole milk is the key to great pudding.
