Royal Brisket!

Hope the Royal's play as good as this brisket turned out and way better than the embarrassing display from yesterday. Put this 14.5 pound pretrimmed CAB (Certified Angus Brisket) from Sam's on an indirect egg with pecan and peach wood at 250 dome around 9:30pm. After the game the egg was holding steady and went to bed with the maverick on the night stand.

Started checking for tenderness at 185. Brisket went from 192 back to 187 and then back up to 196 before finally probing like butter at the 18.5 hour mark. Wrapped it and into cooler for 2 hours until supper.

Then sliced up some acorn squash, brushed with canola, s/p and parsley. Grilled 4 min a side then into a pan covered with half a stick of butter and 1/4 cup of maple syrup. Back into a 400 degree indirect egg for 15 minutes until tender

Sliced brisket, looks dry but wasn't. Took a couple pounds over to the neighbor and commenced eating.

Wife whipped up an almost pumpkin pudding pie and let's go Royal's!
