Until then I'll enjoy sunny Florida and some Four Roses Small Batch. Work ends tomorrow and the family and I will spend some quality time at the Mouse's house (Disney). Any suggestions on BBQ near Disney are welcomed also.

    We honeymooned in Disney, had some surprisingly good BBQ ribs in the Safari park.  Give er a try.

    2 words:  Under.  Cook.  

    Seriously.  Overcooked salmon is the WORST.  Cooked "just through" at no more than 120 IT makes it a silky, lush protein.  Easy enough to plank (raised direct) -- takes longer than right on the grate, but well worth it.  

    I'd like to figure out how to cold smoke, as lox is a family favorite.  I have a feeling that's an extra-credit type of adventure for this back bencher.

    Some day I'll have a thermopen to check what temp I'm cooking salmon to. I'm guessing my final temp is higher. If I don't serve it opaque, I get complaints that it's undercooked.

    @HendersonTRKing - DIL's father cold smokes, he uses a Bradley with the heat element turned off. As long as outside temp is in the 60-75ºF range he is good to go. I have his recipe (which he got from a friend of his) if you want it, PM me.

    Indirect, skin down, 300* for 30 min. Will be perfect. I run with honey and old bay.

    @bcsnave‌ I hope you aren't neglecting the seafood protein on your Egg. Fish shrimp scallops lobster...are incredible on the Egg. Don't miss out.
