I'm not due back home until Sunday night, but I plan to eat salmon on the egg Monday for dinner. Until then I'll enjoy sunny Florida and some Four Roses Small Batch. Work ends tomorrow and the family and I will spend some quality time at the Mouse's house (Disney). Any suggestions on BBQ near Disney are welcomed also.

2 words: Under. Cook.Seriously. Overcooked salmon is the WORST. Cooked "just through" at no more than 120 IT makes it a silky, lush protein. Easy enough to plank (raised direct) -- takes longer than right on the grate, but well worth it.I'd like to figure out how to cold smoke, as lox is a family favorite. I have a feeling that's an extra-credit type of adventure for this back bencher.It's a 302 thing . . .

Some day I'll have a thermopen to check what temp I'm cooking salmon to. I'm guessing my final temp is higher. If I don't serve it opaque, I get complaints that it's undercooked.Chicago, IL - Large and Small BGE - Weber Gasser and Kettle

@HendersonTRKing - DIL's father cold smokes, he uses a Bradley with the heat element turned off. As long as outside temp is in the 60-75ºF range he is good to go. I have his recipe (which he got from a friend of his) if you want it, PM me.Delta B.C. - Whiskey and steak, because no good story ever started with someone having a salad!

Indirect, skin down, 300* for 30 min. Will be perfect. I run with honey and old bay.- EAT BEEF -

Piece of advice for cooking salmon...
1..take the salmon out of the package
2. cut into small pieces....very small......small enough to simulate cat food.....
3. Place salmon into cat bowl...................
4. GO GET SOME DAMN BEEF AND COOK IT ON YOUR EGG!!!!!...........NOW GO!
