Chicken fajitas and spanish rice

Chicken and veggies done on Egg. I marinated the chicken overnight (marinade below).





Started the chicken raised, direct, then finished in CI griddle to get that crust like one finds at a resturaunt. Veggies, just EVOO, salt, and pepper. Had them just under the chicken to get some of those juices.
Not pictured : wheat tortillas,chipotle sour cream, lettuce, and cilantro.





Marinade:
1/2 cup orange juice
juice of one lemon
Tablespoon salt
Tablespoon pepper
Tablespoon chili powder (wish I had anchio)
Tablespoon cumin
Dried parsley for giggles (tablespoon)
5 dashes of Choulua Chipotle.
EVOO (at the end to emulsify)

I could eat thatSalado TX & 30A FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Just given a Mini to add to the herd.

@SGH, I would recommend it. However, I wished it had a little more chili flavor. I think using anchio chili powder would have worked and maybe a tad more. My wife on the other hand loved it.------------------------------

The Spanish rice was made following THIS recipe. It wasn't in my pictures, but I added some shredded Mexican blend cheese on top of the rice and a dab of chipoltle sour cream.I recommend that recipe as well. The recipe calls for whole tomatoes. When I was stirring, I smashed up the tomatoes so there wouldn't be a lot of large chunks.------------------------------
