Husker game=20lb of wings, 20lb of Tri-tip, and 40lb of bacon wrapped pork tenderloin

So this weekend was the PRC BGE Crew cook for the Nebraska v Northwestern game, and political fundraiser for one of the local state Senate candidates. 2 Xl's and a medium put in all the work. Both Xl's lit by 1 and up to temp. On went 20lb of tri-tip.

2 were seasoned with Mickey's Coffee made with Sugar In The Raw, two were done with a White Zinfandel tri-tip marinade I picked up at Kimmel's Apple Orchard last weekend while I was in Omaha, 2 with Bobby's Prime Rib Rub that we get locally from a guy who does catering, 1 with Butt Rub, and 1 with Dizzy Viva Caliente. Egg set for 250 indirect with Jack Daniels chips. Took them all to 120, pulled them and FTC till kick off.

Egg #2 got loaded with the first 10lb of wings. 5lbs with KC Masterpiece Lemon Pepper marinade, 5lb with KC Masterpiece Caribbean Jerk marinade. Running these at indirect at 275.

After the tri-tips came off, we started in with the bacon wrapped pork tenderloin on a stick. We got these through a connection with Cash-Wa the purchased a XXL a while back. Did a couple with Butt Rub that you can see in the top of the photo. These were part of the test run. We did a couple others in KC Masterpiece Honey Teriyaki. Those test runs didn't last long, and we decided to run with those all night.

All of the tri-tips spent a little time on the medium set for direct at 600 to sear them up to 130-135. We did them one at a time, pull, slice and serve as fast as we can. It was leaving the plate as fast as we were cutting them. The pork sticks were not lasting long either. We were doing 20 sticks at a time and could hardly keep up with the demand.

This 5lbs of wings got 1/2 dry rubbed with Dizzy Viva Caliente and corn starch, the other 1/2 got tossed in a hot wing sauce they picked up. I didn't see the name, just went with it to give some variety. The Viva wings kicked my butt, and were the wings that people liked the best. We went home with 5lbs of wings we didn't cook up as wings were not the choice of the night.
The Mickey's tri-tip was the best of the night. The others were ok, but not the favorite of the crowd. Have one tri-tip we didn't sear, it got vac packed and frozen, and well as the rest of the wings in 2.5 lb packages. Have a package of the pork on a stick I will save for a night down the road. But the next time we promo cook we are getting couple more boxes of these.
