Sunday - Two 1st times - Lollipops & Caveman

So I decided to do the chicken lollipops thanks to @NPHuskerFL 's video at the Nest. And I did my first 'Caveman' style on a couple of Sirloins I had..
I bacon wrapped 4 of the lollipops and the rest were coated with a 'Jerk' rub. The Sirloins we about 3/4" thick, marinated in Dales and seasons. I threw 2 of them in the coals just to see how they would turn out. SWMBO really liked the cowboy style so I see more of that in our future. I will be posting more details at the Nest..

I see cartilage at the top of the bone. When you're bending back into itself that should separate and remove cleanly. It has taken me some practice to do that. Next time you'll see what I'm talking about. It's like anything it takes repetition. Then it becomes almost muscle memory like an athlete.LBGE 2013 & MM 2014Die Hard HUSKER & BRONCO FANFlying Low & Slow in "Da Burg" FL

Thank you @SGH
@NPHuskerFL - Yeah there is some there. I need to upgrade my kitchen shears. This will not be the last time so more training to come. hehe
-
What are you using the shears for on the lollipops? When you bend in back you snap and pull/pop. The only cut is the very end of the wing which is waste. Unless you wanna use to make stock.LBGE 2013 & MM 2014Die Hard HUSKER & BRONCO FANFlying Low & Slow in "Da Burg" FL

@NPHUskerFL - Your video is using a full wing, I had 'drumsticks' so there was a little left that I could have removed I guess.
-
They looked great. How did they taste? Family like em. Looked like a TD to me.

FWIW I've never tried doing it with a drumstick. I think it would be difficult to get the bone "clean" like the wing demo due the lack of leverage.LBGE 2013 & MM 2014Die Hard HUSKER & BRONCO FANFlying Low & Slow in "Da Burg" FL

They turned out awesome actually.. The shears I was referring too has a 'grip' in between the handle. After I cut the skin away from the end, I just used the grip and slid it down the bone. Pretty simple actually. I will post a pic of what I am talking about in a moment.
-
See the 'grip' in between the handle where your fingers go? Just grip the bone and push downwards.

Of course the drumstick was vertical with the fat side at the bottom.

Oh I see. Whatever works brotha.LBGE 2013 & MM 2014Die Hard HUSKER & BRONCO FANFlying Low & Slow in "Da Burg" FL
