Finally got egg stabilized at 400F, and then this happened.

Magic, that's what happened, turbo ribs at 400-420, for 1hr and 15 min cook time for super smooth buttah probe with toothpick. Ate almost whole rack, worth the wait tweaking settings to stabilize egg at 400. These ribs were super juicy with a little smoke (4 chunks apple), and easy bite through, not fall apart. I will commence meat coma at end of post. Have a great one.

Rub was Stubbs spice rub, directly on wet ribs(water)
1rack baby backs
400-420 degrees raised indirect, foil on stone,(poorly in haste at last minute).

    @bcsnave, thank you very much, I have been eyeballing the electronic controllers, definitely getting one in the future. I still must master manually controlling temps though,last night taught me the settings to get to the 400 range on my med egg and keep it there.Now I have my low and slow setting down , and 300-400 range down, I know how to get it to 700, so I'm getting there! Thanks again for the input!
