@Skiddymarker-Columbus Day has lost a whole lot of traction over the years. The Fed gubmint recognizes it but beyond that it doesn't have much of a pulse at least where I am. So, since it's a regular work-day for most of us, my cook will likely be that which has been pre-cooked on Sunday. FWIW-Louisville; Rolling smoke in the neighbourhood. # 38 for the win. Life is too short for light/lite beer! Seems I'm livin in a transitional period.

We are cooking up our turkey on Sunday. Will be picking it up tomorrow and brining it overnight.
@canugghead -- although I am going to do traditional egged roast turkey, you have to enlighten me on the amazing ribs style and sous vide method for future attempts.

I just boned out a small turkey. Have a 28 pounder thawing. Going to do the white meat in one ballotine and the dark in the other. After bragging to the wife how cheap the birds were I realised they were the broken ones with parts missing. Have to see what happens.

@Little_Steven - how much for the "big chickens" on your side of the country?Here in the Land of Fruits and Nuts <15 pounds were $0.99/pound, over 15 pounds, $1.49. These "some parts may be missing" ones were $0.79. My mom used to buy them but I haven's seen them in years. I guess I need to get one of those Grandpa strings for my readers. :((

@Little_Steven-would like to see a pic of the deboned turkey before you load it up as I have been challenged when deboning a simple chix. Getting better with every run and have given rise to trying it for the American Turkey and football day. Lou, if I can find my camera I would be happy to. It's gonna be a patch job.Fortunately I made stock last night and used some thighs and legs that I took the skin off. Probably end up looking like a quilt.

@Little_Steven-with a friggin' turkey you can do plastic surgery and no one will know. I believe I could work in Africa (ebola) and solve the contamination issue. I have chased chix parts all over the kitchen when wrestling with the deboning process. I have watched his chix (not the turkey piece) videos several times. Finally motivated by @paqman's recent great posts. Wrestled with two a couple of weeks ago and while a bit lengthy for me (and the second was quicker than the first) they turned out great.Louisville; Rolling smoke in the neighbourhood. # 38 for the win.
