    Yes sir. That particular shank was green. It sat for 36 hours in a cure that I'm very fond of. It cooked exactly 15 hours 28 minutes and 52 seconds. The ham freed up at 199 internal on the Thermapen. For this one I did not use any smoke. Why? Shooting more for a sweet ham on this one.
