Pork Hocks
Well, I aquired these 4 huge hocks. So should I cut off the skin and fat and then season and let sit for a day or two. Then smoke on the BGE? Any ideas?

No seasoning. Do not cut the skin/fat. 350 raised direct with smoke (pecan/cherry). You will never go back to store bought.
