Question on Wing Prep with Corn Starch

I don't know of any advantage to washing the wings (experts say 'don't do it'), but my best experiences w/ cornstarch & wings have been when I let the wings dry - under refrigeration - for a couple/few hours.
Also, I've never applied the corn starch in advance. A few moments before hitting the Egg is when I dust the chicken.

I would prep the wings but hold off the dusting until ready to go in the egg, use a fine tea strainer to dust, it doesn't take long.canuckland

I was wondering that yesterday with my first wings. Didn't use any, just salt pepper juice fro 2 lemons did it rather cool 275 for around 1.75, coated in sweet baby rays and bac on for 20.......came out greatVisalia, Ca @lkapigian

@ Canugghead ...thanks, you read my mind, I was also wandering the best method to dust !!!! I usually roll mine in flour mixture and fry before egging....just a method I learned at the beginning and it has always worked for me and been a big hit with the eaters !!!!I wanted to try the corn starch to see how much difference it makes. I guess I'll find out Saturday !!!

@dldawes1 - 'flour mixture' brings back fond memory ... eons ago in my college days I worked part time at a famous fried chicken place, the chicken pieces were soaked in buttermilk, then rolled in seasoned flour mixture and deep fried in pressure cooker (forgot the oil temp) for 8 minutes (I recall vaguely). The huge kitchen clock had two minute hands, 8? minutes apart, we would write the faster time on each lid with chalk. No alarm, just had to scan the pot lids once in a while, clever!canuckland

FYI, I corn starched immediately before putting them on the egg.....perfect outcome. I used a small strainer and tapped it with a spoon to dust the wings. Worked very well! Thanks again my friends !
