Pizza Cooking Class 101 (pic heavy)

This last Saturday my neighbor (another Egghead) and I took a pizza cooking class for the Egg and the Weber Kettle Grill. It was a lot of fun and very filling. Our local dealer had The 2012 Food Network Grill Mayor, Craig Jones a local guy and his wife. It was very fun and each pizza got better tasting as it went on. There were 9 of us and I think we made 10 pizzas. He first made us a desert pizza with bacon for breakfast. The class started at 10 in the morning and went to 2 pm. We had a lot of different types, but the Thai chicken was the best. Below shows a step by step of what he does. He use '00' pizza flour. You work the dough out by pressing on the edges then pick it up[ and drive it like a steering wheel. Next is oil, kosher salt, crushed red hots sauce, toppings then cheese. Oh i almost forgot the most important part, transfer the pizza crust onto parchment paper so the peal will not stick to the crust. One pizza we forgot the parchment paper and it became a calzone. The last photo is the one I got to make, BBQ chicken with Philadelphia Cream Cheese. I can't wait to make my own pizzas, maybe this weekend.

They had an attachment that goes between the lid and bottom that has a rack in it. On the Weber they had to turn it more often so it didn't burn and raising the grid helps too. I like the pizza on the egg better.
