Sweet Thai Chili Pulled Pork - OFF THE CHAIN!!

I planned a 7lb pork shoulder for this weekend. My wife was not looking forward to standard BBQ. I changed it up a bit. I added some Siracha seasoning to my normal run and injected the pork shoulder with a Sweet Thai Chili Sauce. The results were OFF THE CHAIN! This may be a new regular cook for me.
I cooked indirect at 250F using peach wood and cooked until 197 IT. The pork had EGGCellent moisture and flavor. I topped it with more of the same sweet thai chili sauce and some siracha hot sauce.

Same here. I bought some sort of sweet chili sauce a few weeks ago because it was on sale and I've wondered what to do with it ever since. Maybe without Sriracha it will not be too spicy for Wilma.
