Scallop Appetizer

I made a pot of chili today because my 5 year old daughter has been begging me for weeks. I couldn't go a weekend without egging so we had some scallop appetizers. Dizzy Dust rub cooked on great grandmas griddle in olive oil.

Scallops look great, but next time cook the chili on the egg! Just made a pot yesterday...gives it a little more smokiness and doesn't make the house smell like chili for 3 days.

@Boileregger I cook a huge pot of chili. It just wouldn't be practice on the egg. I cook enough to freeze dinner for the four of us in gallon size bags laid flat in the freezer. We had dinner last night with guests and I still froze 10 bags of chili. The nice part about laying them out flat in a bag is they are about 1.5" and when you pull to thaw them they are good to go in about ten minutes if you lay it in a warm water bath in the sink.Bristow Virginia XL&Mini One of the best feelings in life is watching other people enjoy the food I cooked!
