Trimmed and applied my extravagant rub. Dialed in the Stoker, finished watching the Husker game and retired for the evening.

16 hrs later the brisky had a sexy wiggle to it and the Thermapen probed like buttuh. Had the cooler sitting in my hot truck all day so I wrapped it up for a rest. No need for a towel.

Now for the side. HuskerMaMa put this together. Squash, zucchini, tomato, onions w/ Pink Himalayan sea salt, garlic powder, EVOO, fresh ground pepper, Parmesan and Romano cheese. Baked in egg at 350℉ for approximately 45 minutes.

  • Brisket looks good to me. The broncos one the other hand are making me nervous, the offense has been idle in the 2nd half of both games. Defense has come through both times though.

    I will comment more tomorrow. I need to get some shut eye. I have an early date for blood work and CT Scans for my annual Cancer checkup. My last Chemo was Dec 01. Cancer free for 13yrs now. I am a survivor and my hope is that one day soon there cure for all types of this horrific disease. Gnite y'all. I-)

    Awesome cook and good luck on tomorrow at the doctors. Nice to hear you are still cancer free 13 years. To bad your Broncos beat my Chiefs. It was a better game then I thought it was going to be. I was expecting a blow out. Next week will be a real tough one in Seattle. Praying for continued good news.

    @cazzy‌ The first few pics including me slicing were taken from my mobile (wife took the pics of me). Then the sliced and plated pics were also taken by my lovely bride @HuskerMaMa‌ but, those pics were taken with her nicer camera and soft flash (I have no idea of aperture setting etc). The point ... We had a couple of slices of it and this was by far my best yet. Plenty of leftovers to get creative with....or just throw onto a paper plate and devour it ;-)

    Edit: my wife found the slow bowl online. That thing definitely helps immensely.

  • Nice meal & pix! My sister is a vet and she said putting a decent sized rock in the bowl will slow my gulping dog down and it did.

    After the brisky was pulled I brought the pit to near nuclear for about an hour to burn off the nasties and excess smoke so the veggies would have a clean taste. Then slowly brought pit back to 350℉ish for the veggies in the CorningWare. The crazy part was I technically started my fire the day before at around 9PM. I loaded the egg to the gills w/ RW & large oak chunks from bottom to the top of the fire ring. Cooked the lollipops, then prepped the brisky. Brisky went for around 16hrs. Clean burn at around 700℉ for close to a hour. Then veggies at 350℉ for roughly 45 minutes. And I could've easily went several more hours with what lump was leftover. I'll take a pic of what remains later today after all my testing.

    I'll take that as a compliment I spec. The Great John Elway isn't fat though (perhaps compared to his younger years in his professional prime). No offense taken
