Tonight's dinner

Decided to try something different with boneless chicken breast.  I poked around here and on the net and this sounded worthy--sort of made my own thing up.  Butterflied the breast, used kosher salt. and Cajun seasoning on the meat.  I then stuffed it with provelone and pepper jack cheese.  Brushed it with Frank's Buffalo sauce and melted butter.  Set the egg indirect, 325-350 cook.  Had a tossed salad and carrots and celery with blue cheese.  Wish I had wrapped it in bacon--next time!

  • Man, I could eat cheese on saw dust!  Love that stuff!  I was going to use gouda we had left over from a party, but It had molded--bad!  I almost cried tossing it in the trash.
