I slow roasted the Filet Mignon at 250 indirect until it hit 100° then started increasing temp because I was going reverse sear on these bad boys. Once they hit 120IT I took them off and set the small into inferno mode of about 650ish
And plated up with a fresh salad.

That is an awesome looking cook and great pics. I am going to buy another Egg and am not sure if it will be another large or a small, but after seeing your post and a few others I think the small is the way to go.Thank you my egging brother!Belleville, Michigan

@MeTed - the small is an awesome lil cooker!!! I cook for 2 during the week and up to 12-16 on the weekends when friends just pop in. I find fun in cramming my small with a full load of protein to just to see what it can do. I took it with me to Lake Barkley last weekend. Picked it up nest and guts and put in my Tacoma. No issues. Here's a thread that showed how I prepared the insides for travel
