1st Time For Beef Short Ribs

I am cooking some beef short ribs At 250 to 275 with some cherry and pecan wood. Rubbed with yellow mustard and Black Ops Brisket Rub. Went an at 2 and they are at 162 right now. Taking them to 190. Can't wait for dinner.

My short ribs usualy take about 6-7 hours at 300. Dont be afraid to crank the heat up.Be careful, man! I've got a beverage here.

Ok after 3
5 hours they were at 190 to 195 so double foiled them with some brown sugar and apple juice, then wrapped in towels then a cooler. At 530 I put the small slab on and put some Blue's Hog sauce on them and cooked some veggies. I wanted to do a comparison on dry and wet. They were both good, but I liked the wet and my wife and kid liked the dry. We all still like poto ribs more. The veggies were good too. Sorry this is late, had to help clean the house and spend quality time with the family. I do have leftovers, but not many. Not much of a smoke ring, but good smoke flavor.
