Taking the leftover spatched chicken and making chicken & eggplant lasagna
Made some fresh marinara
Sliced up 2 eggplants misted with EVOO and Italian Seasonings and egg'd em up in two batches
Chopped half a chicken
Put it all together with the normal lasagna cheeses and now it's on the egg at 375 indirect
I will report back when it's done.
