Memphis Style PP Coleslaw Recipe

On my cross country trip last week, we stopped by Mickey's BBQ in St. Louis.  Got the pulled pork sandwich and it had coleslaw on it.  I was a bit hesitant about the coleslaw but once I dug in, I found the sandwich to be one of the best I've ever eaten.  Does anyone have a Memphis style coleslaw recipe to share?

And if you are passing through St. Louis, stop at Mickey's.  It is right off of I-70 and is wonderful!

    Slaw, Coleslaw, Memphis-Style, Corky's

    Eric-H, here are a coupel of Memphis style slaw recipes. My memory is that the slaw was "yellower" than what you would get with Dijon mustard but maybe you can swizzle this a bit.

    INGREDIENTS:
    1 md Head green cabbage - cored -- and shredded
    2 md Carrots; peeled and grated
    1 Green bell pepper; cored, -- seeded and finely diced
    2 Tbs Onion, grated
    2 cup Prepared mayonnaise
    3/4 cup Granulated sugar
    1/4 cup Dijon-style mustard
    1/4 cup Cider vinegar
    2 Tbs Celery seeds
    1 tsp Salt
    1/8 tsp White pepper

    PROCEDURE:

    1. Wash cabbage and discard tough leaves. Core and shred.

    2. Place cabbage, carrots, green pepper and onion into a large bowl.

    3. In another bowl, mix together remaining ingredients. Pour over veggies in large bowl. Toss well.

    4. Cover and chill for 3 - 4 hours before servings.

  • Corky's is the BOMB.   I didn't know that slaw on the BBQ sandwich was a regional thing! I figured everyone ate it like that!

    I usually make a tangy slaw, or use a slaw kit from supermarket here in No. California! I love it on pulled pork sammies!
