OO and first attempt at caveman

It's finally here. I hope it's as good as everyone says it is. Plan to attempt a ribeye egging it caveman style. It's another cut from the farmers market. I paid $14.00lb. Not sure if it's a good deal, but everything I've got from them has been good. Here's the information on the steak.
Grassfed & Grass-Finished
No antibiotics
No hormones
No animal by-products
Dry-Aged 14 days
Bred, born, and slow grown on Montana range land for over 2 years!
USDA inspected and Made in Montana
I've read some post about 30 day or longer dry-aged steaks. These are only dry-aged for 14 days.

More pics to follow. Probably will be late because I have a hard posting and egging at the same time.

Here's the pics. Outside of the steak didn't sear up as much as I would of liked. Still had a bit of crunch to it though. Taste was phenomenal.
Was I supposed to take it straight from the refrigerator? I let it warm up to room temp.
Halibut came out to great too.

Thanks @NPHuskerFL and @OmahaOne. It was a little stressful because this was the first time using Ozark Oak. It acts a little different than RO. I think I'm gonna like it a lot better. Plus, I get a little stressed trying new stuff.Steven

@stemc33 FWIW the first time I did a Caveman I pulled it too early for fear of overcooking with the carryover cook. Fortunately I like mine....

@SGH, I was actually on a thread with you last week when you were reviewing lump. I jumped off the thread for a moment and ordered the OO from FireCraft. It seems like everybody on the forum was talking about OO and RW. I liked RO except the bags I was buying had little pieces that left me with airflow issues. The OO was hot in no time and I just opened and dumped. Nice size pieces.Steven

When I first seen your pics of cooking caveman awhile back, I knew I wanted to try it. Just took me a while to work up the nerve. I don't know, something about throwing down a good steak on the coals didn't seem right.
But, what didn't seem right yesterday, seems completely right today. Thanks again.Steven

That steak looks perfect to me!
The price seems great - at a farmers market in my area, grass fed grass finished beef goes for around $23 per lb
