Tri-tips

Can someone enlighten me on what cut a Tri-tip is. I went to the meat dept. at SAMS and asked the meat cutter there if he had a Tri-tip. He didn't know what I was talking about and started asking me questions. At that point I told him I would have to get back to him and that I thought it was a pretty common cut of beef. So now I have to do some homework so I can get back with him and maybe try to cook one.

Bottom sirloin. It's common in the West, not so much in the East. I think Santa Maria, CA made it popular. I watched a competition BBQ show and some of the competitors had no clue what it was. Great cut as long as it's not done past medium. And medium is pushing into the not so great zone. Sometimes it's difficult figuring out how to cut across the grain because the muscle fibers run in different directions.Steven

Most butcher shops and good markets use the IMPS number to identify cuts. 185D is the one for Tri Tip. When I gave that number to my local super market the meat manager was able to get Tri Tip easily. It should be available to any store if they are in to special orders.

FWIW Costco in our area seems to carry them. I agree with @stemc33- it can be a little tricky to figure out how the grain runs. Here is a good video that 'splains it.Which came first the chicken or the egg? I egged the chicken and then I ate his leg.

Thanks to all for the great information. I should have guessed that Tri-tips are not particularly common in the southeast. I will try giving the m the IMPS # 185D and see if that helps.
