Weekend Egging

Spent the week on the left coast in training for work. It was some really cool training, but missed my family.

Oh I missed my wife and kids too. :D Stopped at Wegman's on the way home from the airport to pickup 7# of wings for apps I am bringing to my nephew's birthday party tomorrow night and 60# of butts for pulled pork for a friends volunteer appreciation picnic they are throwing for a place he is director of on Sunday night. While walking past the seafood counter the Yellowfin Tuna steaks looked oh so pretty and...

Found a post here from Cen-Tex and whipped up some Djion Mustard, Low-salt soy sauce, and sesame oil. Then I toasted some sesame seeds. 
Here it is prepped.

As soon as I walked in the door and got the proteins in the fridge I started the small. Got it to temp with grid on the fire ring.

Seared it both sides and temped with the Thermapen.

Wasn't quite there, so back on for a few more flips.

I wish I had just left the Thermapen inside this time. I prefer the interior raw, but took it to Med Rare (115*).

Flavor was still really good, I just like it better still cool in the middle, if cooked at all.

    I spent the week on the left coast as well. Got back at 2 AM Friday. We ordered pizza take out for dinner. Yours looks much better.

    Here's a tip with the tuna, cut immediately to prevent further cooking.

    It's amazing how the egg motivates a person when they just get home from a trip. I used to be so lazy and wanted to relax after coming home. Now, it's like I'm lighting the egg before I even go into the house.

    That tuna looks good from here..No egging for me today,my friend and I are making sausage today. We normally make about 120# Today we are just making a new recipe and plan to make 40#.This is a South African recipe for "Boerewors"(translation..Farm sausage)..70 percent Beef..20 percent pork..10 percent pork belly fat. The spices vary but predominantly coriander, cumin, ginger, lemon peel, s&p, worcestershire...

    @dmw. Why be embarrassed. If you like it who cares. Depending on where each of us lives certain food stuffs are goin to be cheaper than others.

    Not cooking today. Have to eat leftover burger, reverse sear sirloin and pork tenderloin today/tonight from the last three day's cooks!

    Not really a marinade, just coat before you put them on. My adaptations are drying them in the fridge overnight and putting them back on after saucing for the sauce to set and caramilize.

    Here they are after going back on. I didn't get a pic when they came off. They are in a warmed crock pot at my feet while SWMBO drives us to my sister's place. No idea why she is driving instead of me... :D

    Most eggcellent and wise choice to put SWMBO behind the wheel after those BGE supervisory adult beverages!  Enjoy the wings and good luck with the piggy cook.
