The pork chops I have been seeing lately on the forum have been killing me. I had to cook some. I marinated these thick cut pork chops in some Dale's. I sprinkled with some Firehouse Flashback seasoning. Cooked indirect using plate-setter, 300 degree dome temp. to internal temp of 140. then I remove the chops, took out the plate-setter, lowered the grill and cranked the egg up to 600. I seared for about a minute each side. They were absolutely wonderful! My wife and daughter said "best ever"! Here's a pic during the sear.
