Chicken Tostadas

Chicken Tostadas using leftover spatchcock chicken.





The chicken was cubed up and seasoned with Fajita-ish from Dizzy Pig.
Indirect at 400* til the corn tortillas crisp up.
Then top with re-fried beans, chicken, and grated cheese and back on until the cheese is melted and beans are warmed up.
Topped with lettuce, tomato, and fresh salsa. The salsa was "Restaurant Salsa" from Pioneer Woman. SWMBO made the salsa.
Dang good for leftovers. I've been trying to come up with ways to transform leftovers and this was just too darn simple not to share.
SWMBO also added sour cream to hers, I'm just not a sour cream fan.

:-bd Oh wow!! I love tostadas. More than tacos. I feel like you can just pile more good stuff on 'em. Sure, they might be messier, but that just adds to the fun. Yours looks great. Never thought about Egging the tortillas. You, Sir, are brilliant.

Looks awesome. I just did some last week with ground beef. I add cabbage instead of lettuce to get a little better mouthfeel(crunch)
for me. Beans, meat, cheese, cabbage, guacamole, sour cream, salsa. Yum! -
Looks damn good @DMW ! Will be done soon. I have a ton of pulled pork. I may try it with that too.

Does anybody add enchilada sauce to theirs? I like to add this one. Just a drizzle or two. The rest gets frozen in ice cube trays for later use.
