BBQ beans on a winter day made a nice relaxing cook. For the sauce I did not look at a recipe- just went ahead and started dumping ingredients in using beer induced judgment skills. Creative stuff. I started with white beans soaked the night before. I like pinto but all I had was Northern so that’s what’s going in. I found a chunk of bacon I made…..last year?...... at the bottom of the freezer, the inspiration for this cook.
Haven’t seen a good sunset for quiet a while but this pot o beans started looking just as pretty. A little taste adjustment along the way- a drizzle of black strap. Smoked with hickory and white oak. I mopped my dinner bowl clean with buttered bread……I’m happy.

Unsulphured molasses. Plantation brand is what I have.[p]I just gotta say, your new table for the little guy is great looking. I'm thinking industrial art and design. A hundred years from now your going to be famous as a designer/builder in the future BBQ History Museum of America. Actually.....your already famous right here.

This is my family recipe;[p]Grandpa's Railroad Bunkhouse Baked Beans[p]The evening before, have 2 cups beans and 1 teaspoon baking soda in a pot with water to cover and soak overnight. In the morning, dump water, add fresh and simmer for about 1 1/2 hours or untill beans become tender but not soft.
At high noon start making the sauce;(and sipping a brew)
In a non reactive pot on the stove mix:
2 cups tomato sauce
1 cup ketchup
3/4 cup molasses
1/2 cup brown sugar
2 tablespoons cider vinegar
1/2 chopped onion
1 tablespoon dry mustard[p]Simmer for 30 minutes, in the mean time chop up smoked pork or slab bacon and dump into a 5qt. cast iron dutch oven, dump in pre-cooked beans then the sauce.[p]Bake in the egg indirect, dome 275-300 with wood smoke. Stir once every hour cooking 4 to 5 hours. Nice and easy.[p]Serve with buttered bread, dinner at 6 o'clock.

12 small servings-yeah, you could do it. There is not going to be any leftovers that's for sure. You can kick it up a little with a touch of your hot peppers. If you have a No.12, 7qt. dutch oven you can make a bigger batch - just add half again:(3 cups beans, ect.) [p]I refered to my note book for posting the recipe, he he... The recipe is a base. You can go add/subtract/multiply for creative moods. Smoking is important, and cooking the beans untill they are nice and tender, not mushy like canned beans. At first the beans look like there in a soup but as they cook and absorb the sauce the pot get thicker, the next day after reheating, even thicker.
