Pepper Stout Beef gone Wrong!!!

Made my first attempt at the pepper stout beef and everything was going to plan and then pulled it off after 3 hours in foiled pan and found the pic below...meat was fine but vegetables are not salvageable...

Think of the veggies as burn ends, burnt centers, burnt tops...... Beef looks great. Would rather loose a few veggies than the beef. Next one will be spot on.

Beef was perfect...followed the recipe to a tee...meat took just at 3 hours then added peppers and onions and beer and Worcestershire sauce at 350 for 3 hours and left it go...my grid was above plate setter legs up...think the burn lt veggie picture disappeared so here it is, anyone else have this problem? I know my juices boiled out and ruined veggies but shredded chuck roast was still incredible just got the cast iron out and tried up so peppers and onions...Alexandria, KY

@Big50 -I made this for the third time yesterday, and it was awesome, but my neighbor, using the same method/recipe, had the same issue you did, and his veggies burnt to a crisp. When we looked at it, he used a full size disposable pan and I have only ever used the half size. I don't have the pan measurements in front of me, but the half size pans are 30 in a package for $7.99 at Costco. You are right though, that larger pan spreads out your veggies and beer too much, the beer evaporates and the veggies get overdone. Don't give up on the recipe, but get those half size pans and you will have success!
