    Your makin me want to make paella again. Looks really good!! I couldn't help but noticing you are using what I think is a woo3 with the spider attached and a wok. That the same setup I had for my wok and I cut the spider portion off so it would be independent of the woo. This makes the wok with the D handles more easily removed and not have to fight the upper ring when sh$t gets hot and every second counts when you are needing to dump the wok.
    Not being critical but trying to be helpful from my experience.

    @mattman3969 Yeah, I bought it used a month ago, still trying to decide how I want to use it or how works. This is the first time I used the wok. Thanks for the insight.     @JRWHitee - the wok was sitting low in the cage like mine did and anybody that had the separate spider wouldn't just have the woo on for fun. Deduction my dear Watson :D:D Or a really good guess.

    Your Paella looks tasty!  It is a great cook for sure, and looks like you nailed it - always a party!  

    However, I am curious, I make Paella a couple of times a year, and find that with 2 cups of Arborio rice, I make up 6C chicken broth and 1C of white wine for the broth (7 cups total), and use most of it.  

    Is 4C enough for 2C of Valencia rice, or did you find you needed to add more towards the end?

    Well, "spa-Peggy" is kind of like spaghetti. I'm not sure what Peggy does different, if anything. But it's the one dish she's kind of made her own.
