@SGH I've seen your cooks, you seem more than capable. Plus I have the iq110 by pitmaster. You turn it on by plugging it in. One of the "dumber" controllers but does its job beautifully
@NPHuskerFL are you a peeker or a strict "if you're looking, you're not cooking" kinda guy? And yes it is. When I lived in South Florida I didn't even have a heating coil, big climate shift I'm still getting used to.Steve

After 18 hrs at about 3PM the IT was at 199℉ so I started checking with Thermapen. Pulled at 200℉ (like buttuh everywhere I checked it).


Chopped and shredded (2 pics as the lighting was not cooperative).

Plated w/ slaw and curly baked potato fries.

NPHuskerFL We were just complaining about how humid it was here on the 4th at 30%. I do not envy 90+ temps and 100% humidity, however there are many days I would kill to be in Florida and out in the salt water-How did you make that really cool image of it raining?
