Venison for Lunch

Working from home today. SWMBO and the kids are heading to the beach later this afternoon with my sister and her kids.



So this morning these venison roasts my wife's friend's husband gave me had thawed completely. I put them in the fridge from the freezer on Sunday night.
I had never cooked venison before, wasn't sure what to expect. I did some googling and forum searching and here's what I came up it.
Injected with 2:1 Beef Broth:Worcestershire. Coated with Dizzy Pig Cow Lick. Reverse sear, but finish to Medium rather than Medium rare.
It worked, it wasn't too gamey, kids ate it up. I only got shots of the larger one cut open. The smaller was approaching medium well, and that's the one that we ate from. It wasn't too tough or chewy as well. The flavor was certainly not beef, but I didn't dislike it. I have plenty of leftovers to use for the next few days while the rest of the family is gone.

@DMW nice! One thing with deer it makes a world of difference where the deer is living, diet, etc. That said I had a buddy from GA give me some loins and shoulders (awful :-q likely because of the deer's diet). NE corn / grain grazing Whitetail or Mule Deer is a monster difference. Also had a buddy ship me some from PA (good stuff). I have found that balsamic vinegar works great with venison (with injection/marinade/sauce).

I'm a huge hunter type. One suggestion, if you don't find and remove all musk glands, you are going to have one funkey piece of meat, and the more you cook it the stronger the musk gets. But, your cook looks great.

Looks great, @dmw! My wife and I eat deer meat two to three times a week. We really like to soak it in Dales marinade, and then grill raised direct at 400* to med rare.GWN

This is why I don't like having 4 monitors at her home office. (thanfully she hardly ever works from home but, the one day she is. Boom! And she's like hardly ever on here ever.
