@henapples Smoked Chicken Salad

Getting ready to do @Henapple's Smoked Chicken Salad to take to a get-together tomorrow. So far, I've started off with a comedy of errors. As a newbie, this is the first time I've done a full clean of my XL. Except it can't really qualify as a full clean. I was able to lift out the fire ring by myself, but there's just no way I can safely lift out the firebox by myself. Any suggestions other than call the BF over? Filled the firebox up with Rockwood (trying it out) and lit in three places down low with the Looflighter. Put on my (heavy) CI grates. Laid four foil bricks down on them and then my SS grill. Checked back for messages and saw that Henapple recommended going indirect. Oh well, next time. Realized I forgot the wood for the "smoked" part of the smoked chicken. Took off the SS grill. Carefully (and very ungracefully) took off one of the CI grids. Threw in a handfull of apply chips. BIG fire, lol. Managed to get the CI grid back on. Did the same thing on the other side.
Spatchcocked a yardbird and then seasoned with DP Shaking the Tree. Put the bird, thighs toward the back, on at 400 until done. Here's a pick of the done bird. Skin turned out nice and crispy, but that's just a treat for the cook. Will update as the recipe progresses.

I think that you will find that most of our "recipes" are followed dependent on our consumption of alcohol. I think it looks like you nailed it and as long as it tastes good who cares?I raise my kids, cook and golf. When work gets in the way I'm pissed, I'm pissed off 48 weeks a year.Inbetween Iowa and Colorado, not close to anything remotely entertaining outside of football season.

If you want strictly adhered to recipes; this is the wrong place... Most of us here are more of the "winged it" type that are generally just as surprised as our guests at the level of quality food we manage to produce, especially considering the level of alcohol consumption involved.

No, no, no - Mickey, you know better than that!! A clean burn is where you take a perfectly good egg and heat it to a point where the perfectly good gasket is destroyed, the fire ring is cracked, and the thermometer is rendered inoperative. Oh yes, as a side benefit, the interior that you worked so hard to darken gets white for a few cooks. This overt act of vengeance against blackness is normally perpetrated by individuals who have about 10 cooks on their egg, and long for the purity of a fresh snow fall. Thanks all for the kind words on the chicken. This morning I'll complete the rest of the recipe. Like many on here, I don't really use "recipes" as in measurements...I consider them more inspiration and jumping off point rather than rules to be strictly followed. Salad is done and waiting in fridge for this afternoon's get together. I chopped (what was left after my kids got to) the chicken in the processor. Did the same to the celery (have to hide it from the boys - big and little). Sliced some red grapes. The sauce was 1/2 mayo, 1/2 sour cream, pinot grigio vinegar, S&P. I plan on serving with a selection of Bibb lettuce leaves, whole grain crackers, and tortilla chips.

Thanks for the kind words. The dip went over "okay", but not nearly as well as my (non-egged) deviled eggs. THOSE were the star of the show.

deviled eggs are in a class of there own, IMO. I know, since I have a weakness for them!
The chicken salad looks good from here though. I'd hit it.
