I'm a KC guy, so ketchup for me. I don't mine vinegar either. Never had mustard base, but will have to try it.XL, WSM, Coleman Road Trip Gas GrillKansas City, Mo.

I'm from Charleston, so mustard is one of my favorites.
Family is from Eastern NC, so vinegar based is tops.
Never ketchup. That's for french fries. Plus, I'd get kicked out of the family. (It does taste good, I keep some for guests and use it on ribs - don't tell my aunt) -

Eastern NC vinegar based. I'm particular about no trace of ketchup in mine since I see recipes out there saying something is Eastern NC but have ketchup.
Also a fan of the SC mustard based sauce.
I always make those two sauces myself but do keep a sweeter store-bought ketchup based sauce on hand too for guests just in case. -

Typically I serve the pork with the sauce on the side and have 2 out of the 3 options available depending on crowd. My mom is from S.C. my father is from the midwest so mustard and ketchup based are typical but still like to throw in some vinegar based for a changeup.I raise my kids, cook and golf. When work gets in the way I'm pissed, I'm pissed off 48 weeks a year.Inbetween Iowa and Colorado, not close to anything remotely entertaining outside of football season.

Sweet Ketchup for ribs and chicken......ketchup with lots of vinegar for brisket and pull pork and vinegar with pepper for Carolina style pork and pull pork

I like them all. They each have individual and separate uses. Depending on what I'm cooking and for whom usually determines the flavor profile of choice. I myself enjoy them all about equal.

I like a mustard based and one with vinegar and ketchup. I have been making both for my pulled pork and the mustard has been the one that has been getting the nod lately. Did a whole hog, not on the egg, and made both sauces the mustard went 4 to 1. I like them both about the same.

Ok, I'm that guy, if you're gonna buy mustard and ketchup, why don't you buy BBQ sauce? It's typically located on the same self right between them.
That said, I'll hop down off my box and say I make mine with vinigar hot sauce and molasses, and yes I use my home made hot sauce. Once I made my own ketchup and used it in a BBQ sauce, I'll stick to a more simple recipe from now on lol.
And I only like BBQ sauce on pork. -
