Family vacation... thinking about cooking a butt

We're planning to head down to the beach (4 hr ride) Monday morning.

I'm thinking about cooking an 8lb Boston Butt on the BGE late Sunday night... then will FTC it.

My concern is that we're not going to eat the pork until Tuesday for dinner.  It'll be refrigerated (except for the 4 hr drive, which we can keep it cold) the whole time.

But do you think the pork will still taste great?  When should I pull it?  Could I keep the butt intact until dinner Tuesday night? Or should I pull it early Monday morning and put it in a sealed container?

    Cook it and pull it. If you have a vacuum sealer, seal a bunch of quart size bags and reheat in hot water. It will be great.

    What if I don't have a vacuum sealer?  Just store it in a plastic tupperware container?

    Just did the 800 mile trip to FL Sat before last. This works for me. I cooked a Neked Ham and a Butt on the Monday before leaving. Pulled, vac packed in 1 lb packs on both and into the freezer. Then into ice chests. When we got there into the freezer and took out and into the hot water. Tasted just like it was made. Without a vac sealer, just freeze in zip locks. Not going to be very long anyway. Ps: get a vac sealer, well spent $$. Got mine at Costco for $149.
    Salado TX & 30A  FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Just given another Mini to add to the herd.
