After seeing Leroy's salmon, I had to do mine tonight.
This is a 6lb whole fresh wild salmon from Costco $7.98lb
Seasoned inside with lemon pepper and sliced lemons, grilled direct both sides a few minutes then moved away from coals, added Alder chips to the Mesquite lump and smoked about 20 minutes.........moist and delicious

I don't trim out but I do wash the inside and run my thumb up the inside bone

Super cook. That Mr Chicken makes us all do things ^:)^Salado TX & 30A FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Just given a Mini to add to the herd.
