Disclaimer: With Thunderstorms and rain in the area, the meal was cooked on the big clock tonight...
Decided to try a few recipes that I've been wanted to do for quite a while... Both from http://www.amazon.com/Louisiana-Real-Rustic-Emeril-Lagasse/dp/B0002RQ1SQ
Made Round Steak & Onions and Smothered Green Beans & Potatoes
Both turned out pretty well, and they are fairly easy to make... The family loved it

I followed the recipes pretty much 100%, esp with the spices. Both dishes had a little pop, but not enough to put anyone off...
Some really good recipes in the book... I've done the Chicken & Andouille Jambalaya which is always good

Just curious have you ever tried chuck eye instead of round for this recipe? I could be way wrong but I feel it would be excellent. Your thoughts my friend?Location- Just "this side" of Biloxi, Ms.

I have a couple of chuck eye steaks in the freezer... I think it would likely be better since it has more flavor than the top round roast I sliced up.
