Third Cook on the XL BGE- Corn on the cob, salmon, swordfish steak and Maui.

Tonight's meal: 6 ears of corn 3 pieces of salmon 1 swordfish steak 1 piece of Maui The meal tasted awesome and was a great treat First picture is the before and the following pics are the afters.

    I will attempt to grill direct on the grid next time, I cheated this time and used a perforated aluminum grill pan. The taste was awesome but I didn't get the nice grill marks.

    @KJWILD‌ I wouldn't consider this cheating. I personally like a lot of my fish in a CI pan blackened. When I go direct on grid I have something similar to this which IMO helps so the sometimes delicate fish doesn't flake away or stick. There are many ways to do it. The best way is the one that works for you. Nicely done. ;-)

    Grill marks are sorta cool. I've done this»» quick sear in a CI pan and then lay on grid to sear in grid mark. I use the flat side of my CI grid for fish and other more delicate proteins and veggies. Again there are many ways to achieve similar end results. Explore and find what works best for you.

    DMV, thanks my friend. Moving ahead full speed. Getting used to using the BGE and now that the initial cost and fear of ruining it are subsiding, I am getting more comfortable with it. This forum has been an indispensable tool.
